Tasting Notes
Saperavi from a place not known for Saperavi made by the man who might know the most about it in this country. Tim is responsible for putting Georgian wines on the map in Australia through his day job as a wine importer. This is his take on the native Georgian variety which in his hands is lighter, fresher, less tannic side of the variety. Here he captures the red fruits and pushes Saperavi into a category closer to Beaujolais. A really excellent wine. - Pete L
Les Fruits is the winemaking project of Tim Stock, using organically and biodynamically farmed grapes sourced from the Adelaide Hills and Barossa Valley. Produced in a shed in the Basket Range, the winemaking is simple and minimal. All wines are matured on lees in old French oak barrels of varying sizes, with nothing added apart from minimal sulphur at racking and/or bottling. All of the wines are bottled unfined and unfiltered.
