100% Palomino from Jerez, but this is not fortified and doesn't spend time under flor. Yet, astonishingly, it has many characteristics of fino sherry. Salty, oyster shell, citrus pith, nuts. It's a mouthful and a good one at that. So layered and structured, while still maintaining freshness and integration. Drink with seafood or semi-hard cheese. - Chris L
