Tasting Notes
Everything about the way this is made points at keeping the perfume intact. Two clones of Shiraz picked by hand and fermented together with 30% whole bunch on native yeasts, then extraction kept deliberately gentle with pump overs and drain and returns rather than anything heavy handed. French oak puncheons afterwards for a bit of spice and texture without taking over. The result is lifted and floral with raspberry, red cherry and wild strawberry, bright and delicate right through. Hamish launched Mada Wines in 2016 and is dedicated to working closely with an exciting group of local growers at the forefront of viticulture in Canberra and its surrounds.
