Tasting Notes
Like many of our other Grower Champagne producers, Maurice Choppin farms his estate using biodynamics and has a more honest approach in the winery using wild yeasts, ageing in older oak, shunning the use of enzymes to manipulate the wines and produces a style of wine that is unique to their estate and embraces the variance that vintages offer. Les Bas Russelets is 100% Pinot Noir and spends 36 months on lees developing gorgeous toast and nutty notes that compliment the red fruit flavours. - Pete L
