The Adelaide Hills provides an exciting array of diversity with the high altitude and cool climate creating perfect conditions for gradual fruit development, preserving the fruits natural flavour and acidity. Many winemaking techniques are used to craft this wine including fermentation in large format oak, skins contact, fermentation on skins and lees stirring which all make for an extensive blending pool to draw from. All these techniques add a host of texture and mouth feel to the abundance of tropical fruit. - Winery Note
