This producer is doing some excellent stuff with unfortified Palomino and this "entry" wine is no exception. Fresh and salty but with a bit more weight than the other cuvees. Interesting display of stone fruits with flowers and saltiness - this is a true gastronomic wine. - Aaron C.
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
