Tasting Notes
This wine is 100% wholebunch, something we have been experimenting with for 10 years with fruit from our home site in Red Hill. Whole bunches are placed into fermenters carefully with some SO2 and CO2, then are sealed up airtight and allowed to ferment naturally. Only minimal foot stomping is used to release sugars to keep ferment active. The bunches are pressed after three weeks and transferred to barrels to finish off the fermentation. Bottled in December. 40% new French Oak. - Winery Note
Onannon is three people Will Byron, Sam Middleton and Kaspar Hermann. We make wines that speak a little of ourselves and a lot of the place. We each contributed the last letters of our surnames to make Onannon. - Winery Note
