Tasting Notes
This was such a cool wine to taste and it genuinely blew me away with the approach to Semillon. The fruit is split across a whole range of ferments and ageing vessels, old oak, stainless and demijohn, with a small portion left exposed to oxygen and another given some time on skins, all of it coming back together into something textural and intriguing from a variety that all too often lands lean and unforgiving. This is a long way from your typical Hunter Semillon and all the better for it. - Pete L
Cooper Davis-Draper is a small, grassroots winemaker based out of McLaren Vale. He is focusing on thoughtful, organic farming and transparent winemaking. It's only early days for Cooper, but these wines are already making waves in the Australian wine scene among restauranteurs and wine nerds.
