Tasting Notes

Clos Saint-Jean sits on a gentle east-facing slope just above the village of Chassagne, with thin, stony soils over clay that bring both aromatic lift and underlying structure to Pinot Noir. From mature vines here, Paul Pillot produces a wine of refined perfume and balance, showing red cherry, raspberry and subtle spice with a mineral thread beneath. The palate is supple yet firm, with fine-grained tannins and bright acidity giving shape and length. Domaine Paul Pillot is a family estate based in Chassagne-Montrachet, founded in 1900 and now run by Paul’s son, Thierry, who has been at the helm since 2004. Under Thierry’s direction, the domaine has become one of the Côte de Beaune’s most exciting producers, admired for wines of precision, purity and finely etched terroir expression. The estate farms around 13 hectares across Chassagne-Montrachet, Saint-Aubin and Santenay, with a mosaic of holdings that includes premiers crus such as Les Caillerets, La Romanée, Clos Saint-Jean, Les Vergers and Les Murgers des Dents de Chien.

Viticulture is thoughtful and sustainable, with minimal chemical use and careful attention to vine balance. In the cellar, Thierry favours a restrained hand: native yeasts, gentle pressing, and sensitive élevage in oak (typically low new oak), yielding wines that capture both energy and clarity. While the domaine is historically best known for its Chassagne whites, its reds—from village bottlings to structured premiers crus—show equal finesse.

Today, Paul Pillot is regarded as a benchmark in the Côte de Beaune, crafting wines that are luminous, terroir-driven and built for both youthful charm and graceful ageing.
