Pedro Parra has got to be one of the most interesting people in the wine world these days. He explores terroir like no other meticulously mapping out vineyards and analysing soil types to figure out how to get the best out of each site he works or is consulted for. He travels the globe doing this and works for some of the top producers helping them better understand their sites. He also produces wines from incredible old vines in the Itata Valley like this Pais, delicate, light but packed full of flavour. Reminds me of Poulsard from Jura, mineral rich, packed with red berries and very moreish. - Pete L
