Tasting Notes
The “Dessus la Carrière” bottling from Domaine Gilbert Picq is a benchmark expression of old-vine Chablis grown on classic Kimmeridgian limestone. It shows a crystalline purity, with aromas of lemon zest, green apple and crushed oyster shell layered over subtle floral notes. The palate is taut and energetic, marked by chiselled acidity and a striking chalky, saline drive. There’s depth and concentration here without any heaviness, the fruit framed by a fine mineral backbone that lingers long and precise on the finish. A thrillingly pure, terroir-driven Chablis that will reward both immediate drinking and several years of cellaring. - Chris L
Domaine Gilbert Picq is a highly regarded family-run estate in the heart of Chablis, renowned for producing wines of purity, precision, and terroir expression. Based in the village of Chichée, just south of the town of Chablis itself, the Picq family has cultivated their vineyards for generations, firmly believing that great wine is made in the vineyard first. Today the domaine is run by Gilbert’s children Didier, Pascal, and Marilyn, who continue the tradition of meticulous farming and minimal intervention in the cellar.
Their approach is classically Chablisien: hand-tended vines, low yields, careful pressing, and fermentation with indigenous yeasts in stainless steel to preserve freshness and the signature chalky minerality of the Kimmeridgian soils. No oak is used, allowing the wines to speak clearly of their origin. The results are whites of tension and clarity, with citrus, saline, and flinty notes that have made Picq a reference point for lovers of authentic, artisanal Chablis.
Picq’s wines—from their straight Chablis through to the single-vineyard bottlings—are benchmarks for the region, offering remarkable value and age-worthy depth. They are sought after by sommeliers and collectors alike for their honest reflection of Chablis’ limestone terroir and their consistent, uncompromising quality.
