Tasting Notes
Pierre-Yves Colin-Morey brings the same precision and tension to Aligoté as he does to his celebrated Chardonnays. Sourced from old-vine parcels around the commune of Saint-Aubin, where limestone-rich soils and cool exposures favour freshness and minerality, this wine captures the variety at its most refined. The nose is bright and focused, with aromas of lemon zest, green apple and crushed stone, lifted by hints of white flowers and saline energy. On the palate, it is taut and finely etched, with zippy citrus fruit, a touch of almond, and a chalky texture that adds depth. The finish is long, racy and mouthwatering—a vibrant, terroir-driven take on Aligoté that shows both vibrancy and quiet complexity. - Chris L
Pierre-Yves Colin-Morey is one of Burgundy’s most acclaimed contemporary domaines, based in Chassagne-Montrachet. Founded in 2005 by Pierre-Yves and his wife Caroline Morey, the estate was born after Pierre-Yves spent over a decade working at his family’s domaine, Marc Colin. From the outset, PYCM quickly established itself as a benchmark for precise, terroir-driven white Burgundy, with a growing reputation for elegant reds as well.
The domaine farms parcels across some of the Côte de Beaune’s most celebrated terroirs, including Saint-Aubin, Chassagne-Montrachet, Puligny-Montrachet and Meursault, as well as prestigious premier and grand cru sites. Farming is meticulous and sustainable, with old vines and low yields central to the philosophy.
In the cellar, Pierre-Yves works with a light, detail-focused hand: whole-bunch pressing, minimal racking, native yeast fermentations, and ageing on lees in larger demi-muid barrels with little new oak. The wines are bottled without fining or filtration and often under wax-sealed closures to preserve freshness.
PYCM’s whites are celebrated for their tension, crystalline minerality and longevity, while the reds show purity, fragrance and finesse. Today, the domaine stands as a leading light in modern Burgundy, admired for its clarity of vision and unwavering commitment to expressing terroir.
