
Tasting Notes
This is such a unique take on Pecorino coming from a special site in the Adelaide Hills. It's left on lees for 9 months in old oak helping build texture. It doesn't see any sulphur until bottling so the wine has these oxidative nutty hints and a really pleasing reductive character that makes this quite an edgy take on the Italian variety.
