Ca del Merlo has absolutely nothing to do with the grape variety Merlot if that’s what you were thinking… 55% Corvina and Corvinone, 30% Rondinella, 15% Cabernet Sauvignon, Cabernet Franc Nebbiolo, Croatina, Sangiovese. 50% of the grapes are fermented regularly and the rest is dried on racks increasing the concentration of this portion (but not 100% like the Amarone wines) and aged for 7 years in botti before bottling.
The wine is dense and complex, displaying chocolate, red berry and black berry fruits, fruit cake, vanilla bean, sweet spice and so much more. Fine, mouth-enveloping tannins bolster a palate that is so involved with every crack and crevise of your mouth. Long, intense and full. What a special wine this is. Very limited. - Chris L
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
