Tasting Notes
Similar vinification as the Sangiovese, with 6 months left to macerate on skins, post-ferment, and a gentle extraction. It's typically earthy and dark, with light, floral high notes, and an inviting amaro-like character. The palate shows a wonderful balance between fruit and savoury tones, framed by assertive tannins and finishes with a lingering gamey note. Brilliant Australian Neb. - Felix G
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
