
Tasting Notes
A Chardonnay based Ratafia made in collaboration with Didier Meuzard. This was a bit of a revelation for me... Instantly upon tasting I was imagining how well this would go with a cheese plate packed full of ripe cheeses especially a selection of blues! There is so much ripe quince compote, spice and hints of citrus on the palate. This was delicious! I'll be taking a bottle for myself. - Pete L
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
