
Tasting Notes
The L'Insolite is the flagship of the Sato wines and you can see why. There is more density, structure and layers here, without there being more ripeness or extraction. It's easy to see that Yoshi has used the best fruit off the Northburn Station Vineyard to make this wine. This really is my favourite Central Otage Pinot Noir at the moment. Brilliant! - Chris L
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
