Tasting Notes
A small parcel of Cinsault planted in 1988 on Sinai Hill. Bush vines, dry-farmed, picked by hand. Whole bunches go into the vats for a spontaneous ferment, extraction is kept gentle, and it settles for a few months in small neutral barrels. Florals, sweet spice and a nip of white pepper over raspberry, herbs and dry earth. Made for picnics and long tables. - Pete L
