Tasting Notes
Espumito is our take on a Pet Nat. We always talked about how tons of deliciousness from fine sparkling always came from yeast autolysis in long maturation times in bottle, yet that was impossible for something like a Pet Nat due to its nature. So we set our minds in trying to accomplish just that! We left Cortese and Chardonnay from 2019 blended and in a couple of barriques sitting on their own lees for a year, which is the component that brings that brioche, yeasty, nutty, textural autolytic character into the wine. Then we took some of our 2020 barrel-fermented Barbera and blended it with the Cortese and Chardonnay. We froze juice from our Barbera rosé and added once the blend was made and there was still ferment activity happening. Then it went to bottle and voilá! Espumito was born. A Pet Nat with bright crunchy acidity, citrus peel and confected red fruits from the Barbera, with green apple, flint, brioche, and faint nutty-like flavours coming from the Cortese + Chardonnay. Somos means “we are” in Spanish. It began as a collaboration, but today it is a solo project led by Mauricio Ruiz Cantú, Mexican born, Australian by choice, and proudly shaping a new voice in Australian wine.
Mauricio came to Australia to study viticulture and enology, but quickly found something deeper. A connection to the land. A culture of experimentation. A place where he could build something real. After years of learning, growing, and working, he chose to stay and create his own path.
Somos is the result. A winery built on the belief that good wine starts with respect: for climate, for land, and for the people who farm it. The focus is on climate appropriate varieties that thrive in Australia’s warm, dry conditions, and on fruit that is sustainably grown, mostly from certified organic and biodynamic vineyards. These wines are vibrant, fresh, and expressive. They are shaped by intention and guided by nature.
The wines are crafted to reflect the warm Mediterranean climate moderated by sea breezes and long, even ripening seasons. Vineyards are selected on coastal sands, loam and clay-over-limestone typical of the Vale’s geography. The program works with Grenache, Nero d’Avola, Vermentino and other Mediterranean varieties, fermented with native yeasts, minimal sulphur and without filtration, delivering wines built for drinkability, vibrancy and varietal clarity.
