100% Shiraz from the Schubert Vineyard on Roennfeldt Road, Marananga (Barossa Valley). A dark, brooding and dense wine from 100+ year old vines planted on their own roots (no rootstock). Although rich, it shows plush tannins that are soft on the palate. I'd recommend cellaring this for at least a decade. For interests sake, the name lies within a branch of mathematics known as 'knot theory' - look it up - you might learn something about this wine too. - Chris L
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
