Tasting Notes
The Relic is the only Shiraz from Dan Standish with a touch of Viognier. Although 1-2% doesn't seem like a lot, it's enough to alter the attitude of the wine. It's characteristically more perfumed and elegant than its siblings, yet still maintaining its Barossa muscularity. The fruit is sourced from the Hongell Family Vineyard in Krondorf, Barossa Valley and the wine is fit for long cellaring. If you are opening it young, I'd recommend a lengthy decant prior to serving. - Chris L
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
