Tasting Notes
From a high, stony site, this cuvée is precise and mineral-driven, with aromas of citrus peel, white peach and crushed stone. The palate is tight and coiled, with bracing acidity, saline freshness and a chiselled, linear finish. A refined, nervy Aligoté that captures the crystalline side of the grape. - Chris L
“A more airy, less focused, aromatic but with fine depth. This is the reverse in the mouth—more direct, almost chiselled—but not overtly acidic. Just a beautiful structure—a little chalky texture in this finish. I love it!” Bill Nanson, Burgundy Report
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
