50-year-old vines (mostly in Les Crais) deemed 'not old' because those in the Vieilles Vignes bottling are even older. On pebbles so has finesse rather than structure. Usually about 30% whole bunch and 30% new oak. You can find vibrant, intense and solidly concentrated medium weight flavours that exude a discreet minerality with a complex and persistent finish and maybe a touch of rusticity. - Excerpts from Burghound.
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
