
Tasting Notes
This wine won't be for everyone but it certainly is for me. I really loved this! This wine is heavily influenced by botrytis and has layers of oxidative characters too, pours golden and tastes like baked apples and pears but the craziest part... It's fizzy! It really helps to freshen up the wine and balance the sweetness and weirdly changes it from a wine you'd sip slowly to something you can actually quite fast... Dangerous! - Pete L
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
