100% whole bunch. As in previous releases, the Doktor is a much more savoury expression. Sappy and stalky with pink peppercorn notes, dark cherry fruit, and leafy complexity. The palate is taut and precise with a linear acidity and shape, finishing with gamey complexity. - Felix G
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
