Timo Mayer's Chardonnays are always towards the leaner side of things, crystalline, racy and tense. The fruit for this wine is sourced from Volcanic soils in the Yarra Valley adding another layer of minerality to the wine. Fans of Chablis will like this wine. - Pete L
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
