Tasting Notes
Dancer has a minuscule 0.10-hectares of Chevalier. It was planted in 1952 and sits in the top left-hand corner of the vineyard, on a part of the slope that has the same elevation as Le Montrachet. It’s worked by horse and Dancer makes only one or two barriques per year, reflecting the tiny yields he achieves. We received only 18 bottles and Dancer tells us that this is actually a good allocation! Dancer’s Chevalier doesn’t see any new oak these days—the two barrels of 2018 were raised in one 2015 cask and one from 2017—allowing the natural fruit power and overt minerality to express itself unadorned. - Importer Note
