Merlot, but not as you know it. This is whole bunches of Barossa Merlot steeped under their own juice for 25 days, then pressed off to fibreglass to finish fermenting before an early bottling in spring. That whole-bunch approach keeps it fresh and light on its feet, a world away from the big, plummy Merlot most people expect. Grapes and a touch of sulphur, nothing else.
