Tasting Notes
Cathedral is the entry level to William Downie's stable of top flight Pinot Noir sourced from sites across Victoria. It's a blend of fruit from King Valley, Alpine Valleys, Upper Goulburn and Mornington Peninsula. It's light, airy and delicate with layers of red cherry, strawberry and a touch of spice. It's fantastic. - Pete L
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
