From vineyards just southwest of Chablis, this Sauvignon Blanc offers a fresh and aromatic expression distinct from the domaine’s Chardonnay. The nose shows lifted citrus, gooseberry and white peach, with a touch of herbal freshness and flint. On the palate it is crisp and lively, with juicy fruit balanced by bright acidity and a subtle saline edge, finishing clean and refreshing. Domaine William Fèvre is one of Chablis’s leading estates, founded in 1959 when William Fèvre inherited just a few hectares of vines and set about expanding holdings across the appellation. Today the domaine owns more than 70 hectares, including an extraordinary 15.9 hectares of premier cru and 15.2 hectares of grand cru vineyards—making it one of the largest and most important landholders in Chablis.
Since the late 1990s, under the stewardship of the Henriot family and cellarmaster Didier Séguier, the domaine has embraced sustainable and increasingly organic viticulture, with careful vineyard work and a focus on low yields to ensure fruit precision and purity. In the cellar, Fèvre is known for its restrained approach: fermentation largely in stainless steel with limited use of old oak barrels, allowing the Kimmeridgian limestone terroir to speak clearly.
The wines—ranging from crisp, mineral-driven village bottlings to the refined depth of grands crus such as Les Clos, Bougros and Valmur—are benchmarks for Chablis. They combine crystalline freshness, textural finesse and the capacity to age, offering some of the most complete and terroir-transparent expressions of Chardonnay in Burgundy.
