
Tasting Notes
Our Shiraz (with the usual splash of Viognier) is a wine that continues to demonstrate the affinity of the variety with the Yarra Valley. From the outset, the nose offers a lively, lifted array of aromas - blueberry, violet, black pepper, liquorice and bay leaf. The palate, fresh and energetic, is both perfumed and delicate but then also supple, fleshy and generous. The underlying depth and savoury, structured richness that drives the finish is quietly there now, and over the next 10 or more years it will come to the fore. - Sandra de Pury
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
