Tasting Notes
100% Pinot Noir in Cotes du Jura AOC on limestone clay soils. The fruit was manually harvested beginning of September, fully destemmed and into stainless for fermentation with indigenous yeast. 6 months elevage in neutral demi-muids and bottled unfined and unfiltered. Crunchy black cherry fruit, star anise, violets, earth and game. There is some pine resin and spruce, chalky tannin structure and a nice sweet savoury balance with quite a bit depth on the palate. Very juicy acid drive and really delicious. - Greg Murphy
