Tasting Notes
Pure Pinot Noir, the grapes are destemmed and left to macerate for approximately 6 hours. We proceed with decanting into a concrete tank and spontaneous vinification in the tank for about twenty days. At the end of fermentation it is again decanted into a concrete tank where it rests until the second fermentation takes place. After aging for a minimum of 48 months I proceed with disgorgement and use the same wine for topping up. Pale pink colour, excellent evolutionary and tertiary note on the nose. On the palate, freshness and balance combine very well with the minerality. - Winery Note
The Cherubini agricultural company is located beyond the borders of eastern Franciacorta immersed in a natural park in the Brescia hills a few km from the city center. In this valley there is a terroir of millenary formation with underground aquifers and rocks rich in limestone with a clayey substrate. These characteristics of the soil combined with a constant light breeze and temperature variations give the wines minerality and acidity typical of the production terroir. No conventional agricultural tools such as weed killers or pesticide products are used.
The agricultural and winemaking philosophy is designed to intervene as little as possible both in the vineyard and in the cellar, hence the choice to produce classic Zero Dosage methods with only refinements in concrete tanks which guarantee products with the maximum expression of the territory of origin.
