Tasting Notes
Yet another take on Tumbarumba Chardonnay from CLO. This time it comes from the high reaches of the Courabyra vineyard 740m above sea level planted on red granitic soils. Fermented in a 1000L Austrian foudre for 1 year, followed by 1 year in tank before bottling with a touch of sulfur. On one hand the wine is tight, citrus, flinty and built around the acidity. On the other hand it is rich in flavour, oxidative and savoury. A complex wine that will only get better over the next five years. Unfined. Unfiltered. Minimal sulfites. Natural sediment may form.
