COS is a pioneering natural winery in Sicily’s Vittoria region, founded in 1980 by three friends—Giambattista Cilia, Giusto Occhipinti, and Cirino Strano—whose surnames form the acronym COS. From humble beginnings in an old family cellar, the estate has grown into one of Italy’s most influential producers of artisanal wines, widely credited with reviving the reputation of Cerasuolo di Vittoria and demonstrating the potential of Sicily’s native varieties.
The vineyards are farmed organically and biodynamically, planted mainly to Frappato and Nero d’Avola, alongside Grecanico, Insolia and Zibibbo. The sandy, limestone-rich soils of Vittoria and the region’s warm days and cooling breezes produce fruit of striking perfume and elegance.
In the cellar, COS is known for its pioneering use of clay amphorae alongside concrete and large neutral oak, with fermentations carried out using native yeasts and no additives. The result is wines of purity, freshness, and subtle complexity, balancing Mediterranean ripeness with restraint and finesse.
