Tasting Notes
Ploussard from organic vineyards, hand picked, destemmed by hand carefully so the berries are still whole (meticulous!) when the ferment begins - carbonic maceration for 18 days. Because of this there's not a heap of extraction, but the wine is fresh and lifted. Elevage in stainless, no oak. Bottled with 30mg/L sulphur. Very light in colour. Very subtle whafts of strawberries, cocoa dust, chinese five spice, violets and bacon fat - I mean very delicate and very pretty. Lots of baking spice in there too, and then an underlying minerality. Subtly tense and grippy on the palate, very clean, perfect balance. An easy wine to drink - not a glou glou wine, but more a refined, perfectly made ploussard. Light red fruits, very light and gentle but with super fine tannins. Just the right amount of acid on the finish and very good length. The texture is gentle and dreamy, with more time in the glass it just becomes so pretty. Good served chilled, or cellar temp. - Importer Note
