A slightly riper nose reflects notes of pear, apple, iodine and more prominent mineral reduction character. There is first-rate punch and intensity to the solidly concentrated medium-bodied flavors that are shaped by bracing citrus-tinged acidity on the delicious, highly complex and lingering finish. Les Pargues sits between the official Premier Cru vineyards of Montmains and Vaillons - Abandoned during the First World War, Les Pargues was 'declassified'. After the Second World War, the family began to restore the vineyard to its former glory. Now, 50 year old vines deliver wine of impressive concentration. Only local politics prevents it from being restored to its rightful status. Seventh generation custodian François Servin certainly lavishes Premier Cru attention on Les Pargues, ensuring the honeyed minerality of great Chablis and years of pleasure ahead.
