The Kimmeridgian "exogyra virgula" limestone is particularly present here in the sub-soils, sometimes in compacted slabs. On the surface, clays are cloying and difficult to work after rainfall.
Our Vaillons is an assemblage of 5 separate "climats" (Epinottes, Roncières, Séchet, Chatains and Beugnons). It is a very classical wine with notes of white flowers and sea air. A very sunny exposure and its valley sheltered from the north winds bring quite early maturity that allows it to be enjoyed from its earliest years. It does not have the habitual austerity of young Chablis wines.
Over time, the wine loses its floral aspect in favour of tertiary aromas of menthol and oyster shell. It can be matched with all types of sea produce but also with regional cheeses. - Winery Note
The Droin family has been collecting small holdings in all the top premier and grand cru Chablis vineyards since 1620. Over the last 400 years they have played an important role in shaping Chablis' wine production and local politics throughout their existence. Jean-Paul was one of the first to introduce oak aging to the region in the 1980s, a transformative innovation. In 1999Benoît, Jean-Paul's son, took over as winemaker and the domaine has since flourished. His meticulous vineyard management with severely restricted yields and careful élevage of the individual cuvees afford the attention to detail required for greatness. Benoît's artistry in the winery and careful stewardship of their outstanding collection of small vineyards has long ago elevated the family domaine to the very top of the Chablis tree. The Droin style is one of purity and transparency, coupled with powerful concentration and deep minerality. - Importer Note

Excellent service and offering as ever. Contradas are my favourite Etnas and Chris was able to offer me a fantastic selection this time round. It’s the quality of the wines, combined with the variety of producers on offer, that makes “the cellars” a standout.
