Tasting Notes
This is a Sauvignon Blanc with lusciousness and complex aromatics. More Sancerre in style than Marlborough. The fruit for this wine was picked from a mature vineyard in the Yarra Valley's North before the cloudy juice was fermented by wild yeasts in two 500L French oak barrels (50% new). Extended contact with yeast post-ferment has helped in giving this wine its generosity. Think guava, gunflint and lime, finishing with oyster shell like saltiness. Delicious. - Winery Note
