Tasting Notes
Vermillion is sangiovese (from some of the only sangiovese vines in Aotearoa) with 7% chardonnay. A portion of the fruit was direct-pressed and the other portion was macerated as a red wine, before the two portions were blended together to create an ultra-light red wine or darker style of rosé. An incredibly delicate yet vividly red-fruited expression of sangiovese and a wine of utter precision and deliciousness. - Importer Note
Halcyon Days is the collaborative project of Amy and Olly, who channel their global winemaking experience into expressive, organic wines from Te Matau-a-Māui/Hawke’s Bay. Their fruit comes exclusively from the certified-BioGro Osawa vineyard in Mangatahi, a site defined by cool light-filled conditions and alluvial red gravels that yield grapes of clarity, tension, and natural balance. Working closely with vineyard manager Andrew Colman, they focus on nurturing healthy vines and guiding fruit to the cellar in peak condition. - Pete L
