Vermillion is sangiovese (from some of the only sangiovese vines in Aotearoa) with 7% chardonnay. A portion of the fruit was direct-pressed and the other portion was macerated as a red wine, before the two portions were blended together to create an ultra-light red wine or darker style of rosé. An incredibly delicate yet vividly red-fruited expression of sangiovese and a wine of utter precision and deliciousness. - Importer Note
Halcyon Days is a small, deeply thoughtful Hawke’s Bay producer founded by partners Kate and David Eglinton, who craft pure, naturally made wines with an emphasis on site transparency and gentle, low-intervention winemaking. Working primarily with organically farmed fruit from trusted growers around the region—especially the limestone-tinged slopes and gravelly river terraces that define Hawke’s Bay—they focus on varieties that thrive in the area’s warm days, cool nights and maritime lift, including Syrah, Cabernet Franc, Merlot, Chardonnay and Sauvignon Blanc.
Their philosophy is rooted in minimal manipulation: hand-harvesting, whole-bunch or whole-berry ferments depending on variety, wild yeasts, no additions beyond minimal sulphur, and élevage in neutral vessels to preserve clarity and energy. The wines often show a gentle savoury edge, fine textures and a vibrancy that reflects both the region’s natural freshness and the hands-off regime.
Across the range, Halcyon Days wines are expressive, quietly complex and unmistakably artisanal—modern Hawke’s Bay through a thoughtful, human lens. Their bottlings consistently carry an effortless drinkability alongside genuine depth, making them one of New Zealand’s standout small producers for authentic, terroir-focused wines.
