A blend of two parcels of Chardonay from the McLaren Vale and Adelaide Hills. Naturally fermented and aged in older oak. Lots of stonefruit with a really pleasing almond meal character. Hint of cream on the palate layered with oxidative notes. Needs air to show itself, worth the wait. - Pete L
Les Fruits is the winemaking project of Tim Stock, using naturally and biodynamically farmed grapes sourced from the Adelaide Hills and Barossa Valley. Produced in a shed in the Basket Range, the winemaking is simple and traditional. All wines are matured on lees in old French oak barrels of varying sizes, with nothing added apart from minimal sulphur at racking and/or bottling. All of the wines are bottled unfined and unfiltered.
