Tasting Notes
A single vineyard Pinot Noir from a leased site in Ironbank, made entirely from the Pommard clone and selected from the best parcels and ferments of the vintage. Matured for 12 months in barrel, the wine shows a deeper, more structured side of Adelaide Hills Pinot. Dark cherry and blueberry fruit lead the way, layered with savoury spice, dried rose and a faint meaty note. Medium bodied with a relaxed texture, the palate balances dark fruit with grainy tannins and fresh acidity, giving the wine both structure and lift. - Pete L
Les Fruits is the winemaking project of Tim Stock, using organically and biodynamically farmed grapes sourced from the Adelaide Hills and Barossa Valley. Produced in a shed in the Basket Range, the winemaking is simple and minimal. All wines are matured on lees in old French oak barrels of varying sizes, with nothing added apart from minimal sulphur at racking and/or bottling. All of the wines are bottled unfined and unfiltered.
