40% Carignan, 40% Mourvèdre, 20% Syrah, aged in large oak foudre for 24 months. Selection parcellaire from 10 different lieux-dits. Biodynamic practices, home-made compost, mineral treatments and plant macerations, ploughing, grassing, short pruning, disbudding, thinning out if necessary, manual harvesting, multiple and severe sorting. 100% Destemming, alcoholic fermentation between 18 to 26 days depending on the grape variety and parcel, punching down /pumping over, gentle pressing (pneumatic). Aged for 24 months in foudres and demi-muids. No fining and no filtration.

Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
