Saison Fallen Quinces Vermouth is a small-batch, handcrafted aperitif from Melbourne, created by chef-turned-aperitif enthusiast Dave Verheul. This sweet vermouth uses a Moscato base wine from a 30-year-old family-run vineyard near Rutherglen, Victoria. The 2022 'Fallen Quinces' release features infusions of organic pineapple quinces from Seymour, Victoria, complemented by saffron, blood orange, bay leaf, dried jasmine flower, and rhubarb root. These botanicals are blended with two types of Australian wormwood and balanced with caramelized quince sugar.
