Cool climate single vineyard origin: Huon Valley Tasmania 43oS. Handpicked on a fruit day after the hunters moon. Whole bunch wild ferment, traditional pigeage. Matured 6 months en seasoned demi-muid. Basket pressed, bottled unfined and unfiltered with perfect natural balance. Supple and articulate gamay with refreshing acidity. The song of the nightingale. Cascading wisteria flowers, wild raspberry, cherry, pink peppercorn, young love.

Established by Nav Singh and Louise Radman, Domaine Simha is founded on pristine terroir at the edge of the world. At the heart of each Domaine Simha wine is the epic beauty of Tasmania's pure natural environment, sparkling air and ancient soil. Hunting out magical vineyards in the upper Derwent, Coal River and Huon Valleys, they partner with expert growers to bring their grapes to life. Nav Singh mastered the craft of wine in Australia and honed his skills in the prestigious chateaux of Burgundy and Bordeaux. He takes an artisan approach, gently shaping wines au naturel to harness the provenance of terroir and season: harvesting by lunar cycle, whole bunch wild fermentation, traditional pigeage, maturation in custom demi-muid oak and clay amphorae, bottling unfined and unfiltered with perfect natural balance. Crafted by hand in very small batches, just 2-3 barrels of each Domaine Simha wine is made.
The house of Singh originates from ancient sanskrit for lion, Simha. To honour an heroic heritage, Domaine Simha wines take their titles from royalty and legends of the East. - Winery Note
