Tasting Notes

Sauvignon Blanc from a 1ha parcel in Verdigny. Average age of vines is 50 years, and the soils are kimmeridgian limestone. 50% botrytis. Aged for 36 months in old barrels. Zero SO2 added. Amber in colour but light. It's interesting because the nose is really powerful and complex, but not in your face or overwhelming. It's really well balanced. There's cumquat, herbs, earthy notes and root vegetables. It's very hedonistic, feels like you're drinking something ancient. There's some sort of caramelised orange peel or carrot, maybe it's parsnip, as the sugars start to burn. Some salty notes too. These are all aromas by the way. To drink ‚– texture, but not thick. Hard to explain. It's like a meal in a wine. It's gentle but complex. On the nose again ‚– stone fruits, apricots, pastry, sage and thyme. In the mouth you feel the fine detail, a mineral core, then the fruit - like preserved or dried fruit. Nice tension, but it's like a line through the middle of the wine. Then the fruit spreads out and opens up over the palate, and the flavours linger for eternity. Day 2 ‚– still perfect, colour maybe slightly darker. Fruit richer, but still fine and with more tension today. It's like an apricot tart. Canned apricots and saline notes. Nice phenolics and slight grip. Tastes old school, like nothing else.
