The 2016 Chardonnay is made from fruit sourced from a vineyard in Panton Hill, on the western side of the Yarra Valley. The vines are 22 years old, and the soils here a little leaner and dustier. The fruit was whole bunch pressed directly to old 300L and 225L barrels for a natural primary and malolactic fermentation, before being aged on full lees for 6 months. No fining or filtration.
