Tasting Notes
This is rich, opulent and ridiculously interesting. One of the most distinctive and complex wines I’ve ever had showing bruised apple, blossom, honeysuckle, toasted poppy seed bread, salted butter and an assortment of salted nuts. Crisp in the mouth with some generosity and the ability to age for ages in the cellar. I could smell this wine for hours on end. - Aaron C.
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
