Tatsumi Distillery's Absinthe is a handcrafted Japanese spirit produced by Shohei Tatsumi in Gifu Prefecture. This absinthe is distilled using a traditional Kabutogama wooden still, a method developed during the Edo Period.
The recipe incorporates eight botanicals, with wormwood and anise as the primary ingredients. The wormwood is sourced from a grower in Yamagata Prefecture. The base spirit is a blend of sweet potato shochu and chicory shochu, contributing to its unique flavor profile. This absinthe offers sweet notes from the sweet potato shochu, complemented by the herbal complexity of wormwood and anise. The palate reveals a milky sweetness from licorice, leading to a clean and balanced finish. Produced in very small batches of fewer than 500 bottles annually, Tatsumi Distillery's Absinthe exemplifies meticulous craftsmanship and a commitment to traditional distillation techniques. - Aaron C
The Tatsumi Distillery is an incredibly unique distillery that opened in 2017. Located in the heart of Gifu Prefecture, in the traditional city of Gujo Hachiman, a quaint town at the foot of the Japanese Alps. Brewing techniques remain true to traditional practices and materials, using a copper pot still and a Kabutogama wooden still to create superb Gin and Absinthe.
The Kabutogama still is a distillation method that was originally developed in the Edo Period, and was widely used until the late 19th century. Tatsumi-san, the owner and founder of Tatsumi Distillery, is committed to reviving this method through his dedication to the virtues of patience and expertise, in order to create authentic, handcrafted artisan spirits.
