Tasting Notes

(R15, disgorged September 2019) 120 bottles available. Saignée de Sorbée is a thrilling, idiosyncratic, sappy, stemmy, peppery rosé that can be thought of as a delicious light red as much as a rosé Champagne. The Sorbée plot is a little plateau above the slope where Vouette sits and is almost pure Portlandian limestone—something very rare in Champagne. The site is almost flat, with a slight exposure towards the southwest. Gautherot harvests here in multiple passes, with only the smallest bunches and ripest fruit making it into his Saignée.

Sorbée is the vineyard that gives Bertrand the least amount of stress. The vines here are between 28 and 45 years old and were planted with an old massale selection from Domaine Lafarge in Volnay. The soils have been cultivated since at least the 1860s, with no herbicides ever used. Gautherot feels that this made it easier to transition this site to his biodynamic practices.

This bottling is entirely from the superb 2015 vintage. Uncrushed whole grapes were macerated for six days in an open wooden vat before pressing. Vinified entirely without sulphur, the wine was then aged for 10 months in 400-litre barrels. It was disgorged without any dosage.

It’s a vibrant, red-fruited, bunchy and light-bodied sparkling red. Crushed wild strawberry and nettle as well as an earthy, complex lick that I assume comes from the no-sulphur aging. This is an excellent example of the Saignée de Sorbée and, unfortunately the last of its kind for several years—there was none produced in 2016 and 2017. - Importer Note

The Aube Valley in southern Champagne is the least well-known region of Champagne. It barely features on wine maps of the region! This is mainly due to it's isolation from the rest of Champagne. In fact, the southern parts of the Aube, like the Cotes des Bar, are closer to Chablis in location, climate and soil structure than Epernay (the heart of Champagne).Vouette et Sorbee's tiny 5.5 hectare estate is located in the Cotes des Bar of the Aube in Champagne. The soils here are dominated by Kimmeridgian limestone and the climate is a lot sunnier than the north of Champagne giving wines of depth, breadth and length. They are powerful and unique expressions that need to be considered, so please allow them to open up and serve in a regular wine glass, not a flute. - Chris L
